Precisely what the ultimate pressure is? i have done tests, water does not change phase until the pressure drops to about 1 mbar... the test may be more interesting if the ultimate pressure can be kept as low as <1 mbar in the process. Although this is not quite practical with the presence of outgassing.

should have used an UV light to hit the jars surfaces food knife your gloved hands, prolly not a bad idea to do the whole thing in a sterile glove box and leave the uv light running in the box to reduce free floating contaminants, also you need to choose your test objects differently or set up differently to account for the gasses produced by some of those like the apples, another common example you may be familiar with is your grandmother might put her bananas in a brown paper bag to ripen them faster, she is trapping the gas to rot them faster.

A partial* vacuum.Also that rubber blocking the hole isn't exactly airtight.Also some moisture and gases are retained in the food despite vacuuming so it's just rotting in it's own juices there.

So. 2 things. I wouldn't have opened some of those moldy jars in my house. Spores released instantly. 2 light in the presence of moisture creates mold. Try the test again in the dark. Very different results

EXPERIMENT WAS SCREWED.. These jars cant hold vacuum for more than a hour at most.
